Ingredients

For the pork:

  • 3 to 4 lb Boston butt pork roast
  • Pork Grill Rub or dry rub of choice
  • ½ cup root beer
  • ¼ cup whiskey bourbon

For the waffles:

For the Apple Arugula Slaw:

  • 1 cup arugula
  • 1 cup purchased shredded cabbage mix
  • 1 Granny Smith apple peeled, cored, and shredded
  • juice of half a lemon
  • 1 pinch kosher salt
  • 2 Tbsp ranch dressing of choice

For the whiskey honey syrup:

Instructions

Cook the pork

  • Rub the dry rub all over the pork generously to coat.
  • Place the pork roast in the slow cooker. Pour root beer and whiskey over.
  • Cook on high for 6 hours or low for 8 hours. Shred.

Prepare the whiskey honey syrup

  • Add these ingredients to a small saucepan. Simmer on medium heat until reduced to the consistency of syrup.
  • If mixture gets too thick, add a little more root bear to thin it back out.

Prepare the Apple Arugula Slaw

  • In a medium bowl, toss the apple in the lemon juice.
  • Add the remaining ingredients for the slaw. Refrigerate until ready to serve.

Cook the waffles

  • Whisk together the ingredients for the waffle batter, stirring in the cheese last.
  • Using cooking spray for each waffle, prepare waffles according to the directions for your waffle iron. You want to cook them to a deep golden brown.

Assemble and serve

  • Layer a waffle and top with pulled pork, apple arugula slaw, and a drizzle of whiskey honey syrup.
